Nancy Murphy is an acrylic painter living in Austin, Texas. She attributes her discovery of painting to the “Corona Virus.” Prior to that, she didn’t know she was artistic.
Boredom drove her to sign up for a 2-hour Facebook painting class. A passion was ignited when she discovered a hidden talent she didn’t know existed. It’s been non-stop since. What started as a time filler turned into a blessing.
When she’s having a good painting day, her whole world improves, including her ability to beat her husband in tennis.
She started using a yellow dot in her signature to signify her painting was finished, like a period at the end of a sentence. She loved the way it dressed it up and added a touch of whimsy.

Brunch Pancakes With Green Boost
Serves 2
Takes 15 minutes plus 1 hour resting time
If you’re looking for a healthy brunch, look no further than these Green Boost Brunch Pancakes. They are gluten free and full of veggie goodness including iron and vitamin B12. Customise these by adding your favourite cheese on top or adding different herbs.
Ingredients
100g chickpea flour (gram flour)
300ml water
2 tsps Green Boost
4 eggs
Coconut oil, for frying
40g grated hard cheese (cheddar or
parmesan)
Sliced red onion
1 tbsp hot sauce
Handful of parsley
Method
Whisk together the chickpea flour, 2 of the eggs, water, salt and Green Boost.
Leave to rest for about 1 hour in the fridge.
Heat coconut oil in a non-stick pan on medium heat. Add half of the batter and tilt the pan around to make sure it is evenly distributed. Wait until bubble start appearing on the top of the pancake and carefully loosen the sides with a spatula before flipping the pancake. Cook for a further 2 minutes until both sides are golden then slide onto a plate. Fry the remaining the pancakes.
Meanwhile, fry the eggs in some more coconut oil. When the pancakes are done, top with the eggs, grated cheese, parsley and onions.

Ombre Pancakes With Superberries
Serves 2
30 minutes
Have a go at making these ombre pancakes to really impress your loved ones. Not only do they look amazing but they taste incredible too. A sprinkle of Superberries in the batter adds a burst of colour and berry flavour.
Ingredients
125g plain flour
2 tsps baking powder
¼ tsp salt
2 tbsp melted butter
1 ½ tsps Superberries
1 tbp maple syrup or coconut sugar
1 large egg
175ml of milk
3 tablespoons raspberries, fresh or
thawed from frozen, mash
½ tsp vinegar
Method
Combine the flour, baking powder, and salt in a large bowl. Whisk together and then add the melted butter, maple syrup/sugar, and egg.
Divide the mixture into three bowls. The first bowl will stay plain. Into the second bowl add a heaped tablespoon of the raspberries and 1 tsp of Superberries. Add the remaining raspberries and Superberries to the third bowl.
Into the first bowl with plain batter, add 85ml of milk and mix until just combined.
Don’t overmix. The mixture should be thick but pourable.
Into the second bowl, add 50ml of milk mixed with ¼ teaspoon of vinegar (this
helps the pink colour to stay vibrant) and gently mix together until just combined.
Add 40ml of milk mixed with ¼ teaspoon vinegar to the third bowl.
Heat a non-stick pan over a medium heat and add a bit of butter. Once melted, use a ladle to pour the batter into the pan. Each bowl makes 2 pancakes. Flip when bubbles begin to appear on the surface of the pancake.
To serve, stack pancakes by colour and top with fresh berries and maple syrup.
Pear Pancakes

Serves 1
20 minutes (plus overnight)
This recipe is egg-free and vegan, as well as being totally yummy! Serve these pancakes with your favourite nut butter for a hearty weekend breakfast.
Ingredients
75 grams buckwheat flour
2 heaped tablespoons of oats
1 tablespoon of brown rice flour
75 grams of almond milk
2 pears
1 teaspoon ground cinnamon
1 tablespoon of Bioglan Superfoods Chia +
Flax mixed with 3 tablespoons of water,
allowed to rest for 20 minutes – 8 hours
(the longer the better)
Method
Prepare your Chia + Flax and water mixture and place these aside until
ready.
When ready, simply place the oats, buckwheat and brown rice flour,
almond milk, pears, cinnamon, baking powder, and the Chia + Flax and
water mixture into a high speed blender or food processor and blend until
a batter forms. Transfer this to a bowl.
Heat a frying pan on the stove-top to a medium heat, grease with a little
coconut oil and pour 1/2 a tablespoon of the mixture into the pan, using
the spoon to form a circular shape. Cook until bubbles begin to form on
the top of the batter, then flip and cook for another minute and a half or
so, until the pancake is slightly golden. Then, transfer to a plate and
repeat with the rest of the batter.
Serve with some fresh fruit or nut butter and enjoy!

Vegan Savoury Pancakes With Beauty Protein
Makes 6 Pancakes

25th February is Pancake Day and with this in mind, we thought we’d add a little twist this year by making vegan, savoury pancakes with our Beauty Protein! Topped with vegan yoghurt, avocado and tomatoes, these pancakes are super fluffy and delicious, we love them!
Ingredients
• 200g tofu
• 200ml coconut milk
• 1 tsp lemon juice
• 1 tbsp vegetable oil
• 150g plain flour
• ½ tbsp baking powder
• ½ tbsp bicarbonate of soda
• 1 tsp Bioglan Superfoods Beauty Protein
• 1 tbsp vegan margarine
• 2 tbsp vegan yogurt
• Optional toppings:
• ½ avocado
• ½ lime
• Handful of cherry tomatoes
• Handful of chives
Method
1. Add the tofu, coconut milk, lemon juice and vegetable oil into a blender and blitz until it’s a smooth but still thick.
2. In a mixing bowl, mix together the flour, Bioglan Superfoods Beauty Protein, baking powder and bicarbonate of soda. Add the tofu batter in the middle and mix until you have a thick batter.
3. Place a non-stick frying pan over a medium heat and add a small amount of vegan margarine. Once hot, use a ladle to add the pancake batter to the pan. Cook on each side or until golden and bubbly.
4. Stack the pancakes once they’re all cooked and top with vegan yoghurt, chopped avocado, tomatoes and chives. Squeeze some lime juice over the top and enjoy!

Ingredients:
140g Self raising flour
3 tbsp brown sugar
1 large egg
300ml milk
1 tsp vanilla extract
3 tsp sweet spice
2 tbsp melted butter
1. In a large bowl, whisk together the flour, sweet spice, sugar and ½ tsp salt. In a jug, whisk the egg, milk, vanilla and melted butter. Make a well in the dry ingredients and pour in the milk mixture gradually, whisking as you go to make a smooth batter. Ideally, let the mixture stand for 1 hr (or even overnight, covered in the fridge), although you can cook with it straight away.
2. Heat a non-stick frying pan over a medium-high heat. Melt a knob of butter, then drop in tbsps of the mixture to make pancakes about 10cm across. Cook for 2-3 mins until bubbles appear on the surface, then flip over and cook for 1 min more. Keep each batch warm while you use up the rest of the batter. Stack up the pancakes and serve with hot or cold compote, maple syrup and yogurt.

Day After Porridge Pancakes with Grilled Honey and Orange Figs
Serves 4
Ingredients:
50g Flahavan’s Organic Porridge Oats
250 ml milk
OR 275g leftover porridge and a splash of milk
1 egg
50g plain flour
1 tsp baking powder
4 black figs
Knob of butter
Juice and zest of half an orange
1 tbsp honey
Greek yoghurt
Method:
Place the Flahavan’s Organic Porridge Oats in a small pan over a medium heat with 250ml milk and bring to the boil and reduce the temperature to a low heat and continue cooking for around 10-12 minutes until thick and creamy. Leave the porridge overnight covered with some clingfilm.
Whisk the overnight porridge together with a splash of milk and the egg until well combined. Alternatively, you can add the splash of milk and egg to any leftover porridge you may have.
Sift in the flour and baking powder to the porridge and whisk to combine.
Halve the figs and place cut side facing up on a baking tray. Drizzle with the honey and the orange zest and juice. Place under a hot grill and cook for 5-6 minutes or until the figs start to release their juices and collapse.
Melt a knob of butter in a non-stick frying pan and cook spoonfuls of the batter in batches until golden brown on each side. Repeat until all the batter is used up.
Serve the pancakes with the grilled figs and Greek yogurt.
Savoury Oat Pancakes Stack with Avo, Beets & Feta
Makes: 6 pancakes
Prep time: 20 mins
Cook time: 10 mins
Difficulty Level: Easy-Medium
You’ll need:
100g Flahavan’s Organic Porridge Oats
1/2 tsp sea salt
1 tsp baking powder
1/2 tsp cracked black pepper
100ml oat milk
1 free-range egg
1 tsp rapeseed oil
1/2 Avocado
1 small cooked beetroot
20g feta cheese
1 fried egg
1 handful chopped parsley
Extra virgin olive oil
Method:
Put the Flahavan’s Organic Porridge Oats and salt in a food processor, and blend until you get the consistency of a mealy flour. Tip into a bowl and stir in the baking powder and pepper.
In a measuring jug, whisk together the milk and 1 egg, then stir the wet mixture into the dry, until thoroughly combined. Do not let the batter rest, as it may thicken too much. If this occurs, add more milk.
Pour ½ a teaspoon of oil onto a non-stick frying pan and spread around the pan.
Heat a frying pan over a medium heat then add about two teaspoons of the batter. Cook for approx. 2 minutes or until a few bubbles have appeared and the pancake has risen slightly, then use a spatula to flip the pancake, cooking for a further 2 minutes.
Serve with a fried egg, chopped cooked beetroot, sliced avocado, fresh parsley, feta and extra virgin olive oil (or any savoury toppings you desire!).

Cinnamon Pancakes
Makes 6
Prep time: 10 mins Cook time: 25 mins
Ingredients
. 1 1/2 cups almond or sunflower seed meal
. 2 Tbsp chia seeds soaked in 1/3 cup water
. 1 tsp bicarb soda
. Splash of apple cider vinegar
. 1/4 tsp Changing Habits Seaweed Salt
. 3/4 cup arrowroot flour
. 2 tsp Changing Habits Cinnamon Powder
. 3 organic free range eggs
. 2 Tbsp Changing Habits Rapadura Sugar
. 1/4 cup water
. 1 Tbsp coconut oil or ghee plus extra for cooking
Directions
1. In a food processor, add all of the ingredients and pulse until well combined.
2. Heat a large frying pan on medium heat and melt a teaspoon of coconut oil or ghee in the pan.
3. Add 3 Tbsp of the mixture per pancake to the frying pan and cook. Once the bottom is cooked, carefully flip with a spatula and cook the other side.
4. Transfer to a plate and repeat this process with the rest of the mixture.

Banana Pancakes
Makes 4
Ingredients
. 3 large bananas
. 6 eggs
. 1/3 cup coconut flour
. Coconut oil or butter for cooking
Directions
1 Blend all with thermomix or food processor.
2 Heat frypan over medium heat and add coconut oil.
3 Spoon mixture into the pan and flip after 3 – 5 minutes.
4 Cook until golden brown and serve with fresh fruit.

Zucchini Pancakes
Makes 2
Ingredients
. 2 medium zucchini’s, grated
. 2 spring onions, chopped
. 1/4 – 1/2 cup almond meal
. 2-3 eggs
. 1/2 cup cheese, grated
. Changing Habits Seaweed Salt and cracked Changing Habits Pepper
. coconut oil for frying
Directions
1 Place a large frying pan on the stove top and heat on a low- medium heat.
2 Mix all the ingredients together (starting with 2 eggs) in a bowl until evenly combined. Start with 1/4 cup of almond meal and gradually add more if needed (the amount may depend on how much water the zucchini releases). If the mixture is too dry, mix through the remaining egg.
3 Begin to cook the batter in medium sized pancakes on both sides until golden brown, continue cooking until all the batter has been used up.
4 When they’re ready serve straight away, or pop them in the fridge and enjoy them for lunch or a snack.

Traditional South African Pancake recipe
For sourdough junkies, these fluffy sourdough pancakes from Erica of Buttered Side Up would be the perfect way to start your morning.
These are fermented overnight: that way you can mix up the batter the night before, add a few more ingredients in the morning, and voila! You’ve got yourself some awesome pancakes. Plus, they have a secret ingredient that adds extra tang!
The batter is thicker than traditional pancake batter, but don’t be fooled: these are nice and light. The key is to make sure the batter ferments long enough!
Serve with good butter and a drizzle of real maple syrup. By the way, these would be perfect as supper for dinner!

Wholemeal Cheese Crumpets with Fresh Figs and Honey
Makes 6 crumpets – you will need metal pastry rings or round cookie cutters to make these. You can also make tin foil rings.
Ingredients
100g self-raising flour
50g wholemeal flour
1 tsp sugar
¼ tsp salt
100ml water
100ml milk
1 sachet dried yeast (7g)
¼ tsp bicarbonate of soda
50g cheddar, finely grated + extra for topping slices
Fresh figs
Honey
Method
Combine the flours, sugar and salt in a large mixing bowl and set to one side.
In a jug, mix together the milk and water and heat in the microwave until lukewarm. Add in the dried yeast, stir and leave to activate.
Once small bubbles start to form on the surface, pour the liquid mixture into the dry and whisk together until completely smooth.
Cover the bowl with cling film and leave in a warm place to prove for at least 15 minutes.
Once the batter has doubled in height and is very bubbly, whisk in the grated cheese and bicarbonate of soda to make the mixture smooth again.
Place a heavy bottom frying pan over a medium heat and grease with a light coating of butter.
Grease your pastry rings or cookie cutters with butter and place 3 in the pan (you can also do these one at a time if you only have one).
Spoon the batter into the rounds, filling half way and spreading to the edges.
Turn the heat to low and leave the crumpets to cook for 4-5 minutes before removing the rings with tongs. If the tops aren’t quite done enough after this time, flip them over for a few seconds to finish them off.
Remove from the pan and repeat until all of the batter has been used up. The bottoms will go a little dark, but this is normal.
Once all of your crumpets are made, you can reheat them light side down in a pan or in a toaster. Butter and top with fresh figs, shavings of cheddar and a drizzle of honey.

Mixed Berry Pancake Stack
Pancakes:
100g plain flour
90g wholemeal flour
1.5 tsp baking powder
1/2 tsp salt
45g granulated sugar
250ml milk
1 large egg, lightly beaten
70g melted butter
Butter or oil for the pan
500g mixed berries, fresh or frozen
Method:
1. Combine flours, baking powder, salt and sugar into a large mixing bowl
2. In a separate bowl, mix the milk, eggs and butter
3. Pour the wet ingredient into the dry ingredients and mix well until combined
4. Let the batter sit for 10-15 minutes
5. Heat a non-stick skillet pan over medium heat and add your butter or oil
6. Add a ladle (or 2, depending on the pan size) into the pan. When they start to bubble, flip them
7. Cook until the other side is golden brown
8. Repeat until all your batter is cooked
Berries:
1. Pour the berries into a saucepan on medium/low heat
2. When they start to loosen, you can begin to mash them
3. Slightly raise the heat to medium and let the fruit reduce, so it becomes thick. If it’s too thick, you can always add more water
4. You can also add honey or sugar for sweetness if you prefer
5. Spoon as much as you’d like on the pancakes and enjoy!

Black Bean Quinoa Veggie Burgers
Ingredients
1 tin black beans, drained and rinsed (drained weight 230g)
1 flaxseed egg
3 tbsp tomato purée
125g cooked quinoa
50g wholemeal flour
1/2 garlic salt
1 tsp paprika
1/2 tsp oregano
Salt and pepper to taste
Olive oil
Method
Preheat the oven to 180°C fan.
In a bowl, mash the black beans with a fork.
Add the flaxseed egg and tomato purée, then the quinoa, flour and spices and mix with a spoon.
Form the mix into 6 burgers and place on a baking tray.
Heat the olive oil in a frying pan over a medium to high heat and fry each burger on each side for 1 minute.
Place them onto a baking tray lined with baking paper and bake in the oven for 15 minutes.
Serve up with your favourite burger accompaniments and enjoy!

An original pancake recipe that’s perfect for kids thanks to Lisa from sensibledigs.com . It uses applesauce instead of sugar and includes eggs and milk for added protein. My sons, 7 and 9 years old, have enjoyed eating them for years. They are soft, sweet, and go great with any topping. We call them “kid-cakes”!
Here’s the recipe:
Kid-cakes
1 ¼ cups flour (less for thinner pancakes, more for thicker)
1 tsp baking powder
Pinch of salt
½ tsp vanilla extract (or 1 tsp vanilla sugar)
2 eggs
3 heaping tablespoons applesauce
1 cup milk
Whisk together all wet ingredients. Add the flour, salt, vanilla, and baking powder, and whisk just until dry ingredients are moist. (Don’t over-mix, or else your pancakes will be dry)
Heat 2 tablespoons of vegetable oil in a non-stick pan over medium-low heat. If the oil gets low as you cook your pancakes, add more as needed.
Use a ladle to pour the batter into the pan in any shape or size you want.
Flip the pancakes after bubbles start to appear on the surface. Watch closely, as the second side will cook much faster than the first.
Remove from the pan and enjoy with your favorite toppings.

Day After Porridge Pancakes with Grilled Honey and Orange Figs
Serves 4
Ingredients:
50g Flahavan’s Organic Porridge Oats
250 ml milk
OR 275g leftover porridge and a splash of milk
1 egg
50g plain flour
1 tsp baking powder
4 black figs
Knob of butter
Juice and zest of half an orange
1 tbsp honey
Greek yoghurt
Method:
Place the Flahavan’s Organic Porridge Oats in a small pan over a medium heat with 250ml milk and bring to the boil and reduce the temperature to a low heat and continue cooking for around 10-12 minutes until thick and creamy. Leave the porridge overnight covered with some clingfilm.
Whisk the overnight porridge together with a splash of milk and the egg until well combined. Alternatively, you can add the splash of milk and egg to any leftover porridge you may have.
Sift in the flour and baking powder to the porridge and whisk to combine.
Halve the figs and place cut side facing up on a baking tray. Drizzle with the honey and the orange zest and juice. Place under a hot grill and cook for 5-6 minutes or until the figs start to release their juices and collapse.
Melt a knob of butter in a non-stick frying pan and cook spoonfuls of the batter in batches until golden brown on each side. Repeat until all the batter is used up.
Serve the pancakes with the grilled figs and Greek yogurt.
Savoury Oat Pancakes Stack with Avo, Beets & Feta
Makes: 6 pancakes
Prep time: 20 mins
Cook time: 10 mins
Difficulty Level: Easy-Medium
You’ll need:
100g Flahavan’s Organic Porridge Oats
1/2 tsp sea salt
1 tsp baking powder
1/2 tsp cracked black pepper
100ml oat milk
1 free-range egg
1 tsp rapeseed oil
1/2 Avocado
1 small cooked beetroot
20g feta cheese
1 fried egg
1 handful chopped parsley
Extra virgin olive oil
Method:
Put the Flahavan’s Organic Porridge Oats and salt in a food processor, and blend until you get the consistency of a mealy flour. Tip into a bowl and stir in the baking powder and pepper.
In a measuring jug, whisk together the milk and 1 egg, then stir the wet mixture into the dry, until thoroughly combined. Do not let the batter rest, as it may thicken too much. If this occurs, add more milk.
Pour ½ a teaspoon of oil onto a non-stick frying pan and spread around the pan.
Heat a frying pan over a medium heat then add about two teaspoons of the batter. Cook for approx. 2 minutes or until a few bubbles have appeared and the pancake has risen slightly, then use a spatula to flip the pancake, cooking for a further 2 minutes.
Serve with a fried egg, chopped cooked beetroot, sliced avocado, fresh parsley, feta and extra virgin olive oil (or any savoury toppings you desire!).
