SWEETHEART SEMI-FREDDO LIME, COCONUT AND AVOCADO CHEESECAKES

Ingredients
75g (3oz) White’s Apple, Cranberry and Raspberry Granola
50g (2oz) White’s Organic Jumbo Oats
50g (2oz) coconut oil
4 Medjool dates, pitted
25g (1oz) unblanched almonds
1 tbsp. raw cacao powder
4 ripe avocados
1 lime – finely grated rind and juice
2-3 tbsp. agave nectar
100g (31/2oz) cream cheese
Dark chocolate hearts and cocoa powder to decorate
Method
1. Line the base of 4 x 10cm (4in) x (3cm /1/4in deep) fluted tart tins with baking parchment.
2. Melt the coconut oil in a small saucepan. Pour half the coconut oil into a food processor and add the dates, almonds, oats, and cacao powder and whizz to a coarse paste. Divide between the tart tins and press down evenly with the back of a spoon. Chill until ready to use.
3. Halve the avocados and discard the stone. Place the avocado flesh, remaining coconut oil, lime rind and juice, agave nectar and cream cheese into a food processor and whizz to a smooth paste. Divide between the tart tins and level the surface. Freeze for 2 hours until firm enough to turn out onto serving plates. Scatter over the granola. Decorate with dark chocolate hearts. Dust with cocoa powder to serve.
Cook’s tip
This creamy pudding makes a great recipe for Valentine’s Day. When made, place a heart shaped cookie cutter on top of the cheesecakes and sprinkle the granola into the cutter. Carefully remove the cutter leaving the granola heart decoration in place. Decorate with chocolate hearts and cocoa as above.
CHOCOLATE BEETROOT CUPCAKES
Everybody loves a chocolate cupcake, and these will be no exception!

Ingredients
75g (3oz) White’s Organic Jumbo Oats
25g (1oz) White’s Apple, Cranberry & Raspberry Granola
75g (3oz) cocoa powder
100g (31/2oz) plain flour
2 tsp baking powder
250g (9oz) cooked, peeled beetroot in natural juices, drained
3 large eggs
200ml (7fl oz.) sunflower oil
1 tsp vanilla bean paste
250g (9oz) caster sugar
125g (41/2oz) white chocolate
4 tbsp. cream cheese
Method
Preheat the oven to 180*C/fan oven 160*C/Gas mark 4. Line 12 holes in a muffin tin with paper cases.
Sift the cocoa powder and flour into a large bowl and stir in the oat bran and baking powder. Place the beetroot, eggs, sunflower oil and vanilla bean paste into a food processor and whizz until smooth. Stir into the flour mixture with the caster sugar and beat until well combined. Divide between the paper cases and bake for 25-30 minutes until risen and firm to the touch. Cool on a wire rack.
Melt the chocolate in a bowl set over a simmering pan of water. Remove from the heat and allow to cool slightly. Beat in the cream cheese until thick and glossy. Divide between the cupcakes and spread evenly. Sprinkle over the granola to serve.
Cook’s tip
Look out for ready cooked beetroot in the fresh fruit and vegetable aisles of the supermarket – make sure you choose beetroot in natural juices not dipped in vinegar.
